Anisakiosis is an infestation by larvae of parasitic worms called Anisakis. These worms belong to a family of marine parasites that use multiple hosts during their life cycle. Bonito (Sarda sarda), like many predatory fish in the Mediterranean, can harbour these larvae in its flesh and organs. This parasite is primarily known for its public health importance, as humans can become infected by eating raw or undercooked fish. In bonito itself, infestation is usually silent and without serious consequences.

In bonito, anisakiosis often goes unnoticed. Infested fish generally show no obvious external signs.

When the fish is opened, the larvae appear as small whitish to pinkish worms, coiled in a spiral and visible to the naked eye in the organs, on the liver, or sometimes in the muscles.

Causes and risk factors
Anisakiosis is caused by nematode larvae of the genus Anisakis, notably Anisakis simplex. The parasite's cycle involves several stages: eggs are released into seawater, hatch into larvae that are ingested by small crustaceans, which are then eaten by fish or cephalopods. Bonito, as a predatory fish, becomes infected by feeding on prey already carrying larvae. The cycle is completed when marine mammals such as dolphins or seals consume infested fish; adult worms then develop in the intestines of these mammals.
Larger and older bonito, which have consumed more prey during their lifetime, statistically carry a higher risk of heavy infestation.
The presence of marine mammals in a fishing area increases parasitic pressure, as they are the parasite's definitive hosts.
Areas with high densities of small fish and intermediate crustacean hosts also promote transmission.
Transmission
The parasite spreads through the marine food chain: infested crustaceans eaten by fish or cephalopods, which are themselves eaten by predatory fish such as bonito, then by marine mammals. Humans become infected only through ingestion of raw or poorly prepared fish containing live larvae; there is no direct transmission between fish or from bonito to humans through simple contact.
Diagnosis and care
Diagnosis is the veterinarian's responsibility, based on clinical examination and laboratory tests. Care is decided case by case.
No individual veterinary diagnosis is performed on live bonito for this parasitic infection. Detection typically occurs after capture, during evisceration and health inspection of the fish, by direct observation of larvae in the organs or flesh.
In professional or health control settings, more detailed examination (candling under light, enzymatic digestion of tissue) may be performed to detect larvae not visible to the naked eye.
Treatment
No antiparasitic treatment is available for bonito in their natural environment. No therapeutic intervention is possible or appropriate for wild fish carrying this parasite.
Treatment depends on the cause and the animal's condition: it must be determined by a veterinarian. No self-medication.
Prevention
There is no way to prevent infestation in fish living in their natural environment, since the parasite's life cycle is natural and cannot be interrupted at sea.
Prevention focuses mainly on human food safety: thorough cooking of the fish, or prior freezing following current health recommendations, destroys the larvae before consumption.
Visual inspection of fillets during evisceration and processing allows visible worms to be removed.
Possible complications
In bonito, direct complications are rare. Very heavy infestation could theoretically weaken the fish or impair flesh quality.
The main concern is not the fish's health but the health risk to human consumers if the fish is eaten raw or undercooked, with potential digestive upset or allergic reactions in humans.
